I’m originally from New Hampshire, USA, and although I now live in Scotland, the American accent is still very much there, just slightly confused these days, with the odd Glaswegian twang sneaking in.
I spent years working as a chef in country clubs across America, so I’m used to long hours, high standards, and keeping calm when things get hectic. Kitchens teach you to think on your feet and get on with all sorts of people, skills that stick.
These days, I’m a brewer through and through. I’ve fully embraced the craft — beard, practical boots, hands-on mindset and all. I’ve been told I’ve got the “classic brewer” look, which I’ll happily lean into. I’m steady under pressure, adaptable, and tend to bring a dry sense of humour with me.
